Jet-Lagging: Vacation Recap

Now that I'm officially a grown-up with a salary, health insurance coverage and all hints of midterms and finals behind me, I really could go on vacation whenever I wanted. January ski trip, off to the beach in May, San Francisco in October... there's no calendar that dictates my adventures except my own.

But vacation gives me the kind of trampoline-back-flip-head-rush, the jump in my heart when I'm somewhere new and exciting, that I crave. And for some reason, it just feels right in the summer.

We started out our summertime adventures with a trip to Copenhagen, Denmark.

I love Europe's "sneaker culture." Because everyone walks everywhere (and I mean just about everywhere), sneakers are the go-to shoe, and out of sheer necessity, they go with everything. As you can see by my pile of Nike gear, I embraced that concept fully.

I'm learning that you don't have to pack a lot to get a lot out of your outfit options. Pack classic options that can be worn in different ways, and you won't have to worry about your outfit choices. You're the only one who cares what you're wearing, so... care less. Enjoy your experience more.

Enough of the "what-I-wore" talk. Let's get into what I did. And ate.

Book Club: Real Life

With the exception of some true crime novels, and a few books by Norman Mailer, I don't often read nonfiction lit. In fact, when I found Five Days at Memorial and added it to my, "To Read" list, I thought I was picking up some type of historical fiction.


The fact of the matter is, immediately after you start reading Five Days at Memorial, you realize the exact opposite is true. This Pulitzer Prize-winning tome, written by Sheri Fink, is actually a gruesomely true tale of the events that happened at Memorial Hospital in New Orleans in the aftermath of Hurricane Katrina. From the onset, I was riveted.

Depending on where you lived during Hurricane Katrina, your experience with the superstorm may range from extremely personal to a distant memory. Regardless, Five Days at Memorial will challenge your perception of one of our nation's biggest disasters and leave you wondering, "What would I have done?"

Shopping My Closet: One of the Boys

I can't be the only one who has those days where I don't want anything clinging to my body. You know what it feels like: your hair is a day past dirty, you had a late night and you're guzzling coffee like caffeine is the very essence of your being, and if you have to wiggle into a pair of skinny jeans it will be the absolute end.

Just me? Okay.

I have been on the quest for the perfect boyfriend jeans. Ripped in all the right places, baggy, slouchy, room for giant cuffs at the ankles, low-slung but not low-rise...

I thought I had hit gold with this Gap pair, but they were just too nice and comfortable for me to truly destroy the way I needed to.

I had started thinking it was hopeless, but I went with a friend to Urban Outfitters, and found the holy grail of boyfriend jeans in the men's section. Levi's 508, light wash with some distressing already implemented - I was in heaven. I even added a few more rips and tears to get the perfect shredded look to them, and I have to stop myself from wearing them every single day.

Saturday. Sandwiches.

I held this in for much longer than I intended. I started to write this, decided I was using too many adjectives to describe the best sandwich you will ever eat in your entire life, then rewrote it and rewrote it, but it is just not fair for me to keep this sandwich from you for another weekend. I cannot do it.

Last Saturday morning the Husband and I were wandering around the house, doing house things. Cleaning the pool pump, sorting mail, mopping the floors... all of the things you do to make it look like you didn't just throw your briefcase on the floor and eat chips straight from the bag all week. Ahem.

It came to be about 11:30, and we realized we hadn't eaten. We are brunch people. We are food lovers. This was a sin.

I was several mugs of coffee into my day, and I was feeling adventurous. I opened the fridge and saw... possibilities.

For dinner earlier that week, I had made a modified version of these Steak Fajita Stuffed Baked Sweet Potatoes (which were delicious, trust) with chicken instead of steak, just using all of the same seasonings. They were heaven on earth, and I had loads of shredded, savory chicken left over, plus two sweet potatoes that would surely wither and die if I left them in my fridge for a moment longer.

That, plus eggs, bacon and a homemade chipotle mayo = sandwich nirvana.

 So, how do you create your own? I'm here to guide you into perfect sandwich perfection.

I used "perfect" and "perfection" in the same sentence. I am serious.

Saturday Sandwiches - Serves 2
You'll need:
Chicken (one large breast or two to three tenderloins seasoned with this recipe [I recommend making a full serving of the chicken - it reheats really well] a good helping of rotisserie chicken from your grocery store or shaved deli chicken, your choice)
One small/medium-sized sweet potato
Two eggs
Eight pieces of bacon
Bread of your choice (I used sourdough rolls from our grocery store bakery)
Chipotle mayo (recipe below)

Chipotle Mayo:
 - Measurements are fluid, so adjust to your personal preference -
Sauce from a can of Chipotle Peppers in Adobo Sauce
Hellman's Mayo (use full fat or low fat, but I can't vouch for Miracle Whip)
Paprika
Red pepper flakes
- Mix to your liking. Add more or less of each ingredient to taste. This will keep in the fridge for at least two weeks, but it probably won't last that long, because this stuff tastes great on everything.

1.  Wash your sweet potato and cube into small chunks. Coat a skillet with oil and add potatoes, seasoning with salt and pepper. Cook all the way through. Set aside.

2. If you're starting from scratch with your chicken, mix the spices/seasonings together and place your chicken breast/tenderloins in the mixture. Make sure they get really coated - you can even let them sit in there for a few minutes while you pour yourself another cup of coffee.

3. Fire up your cast iron skillet with a little bit of oil, and cook the chicken all the way through. Shred and set aside.

4. Cook your bacon however you cook your bacon. Oven, skillet, microwave... whatever. I lay down paper towels on a plate and zap slices in the microwave. It depends on your microwave, but I do 4 pieces for 4 minutes for crispy bacon.

5. In a pot, mix 2-3c hot water with 1/2c vinegar and bring to a gentle boil. Crack two eggs into the water and allow them to poach. Cook to your liking. (Husband's were more cooked through than mine - I like runny yolks.) The vinegar isn't absolutely necessary, but it helps keep your whites together while your eggs are tossing and turning in the water.

6. Using a toaster oven/toaster/oven, lightly toast bread until you get a little bit of a crunch

7. Smear generous portions of chipotle mayo on both sides of your bread. On one side of your bread, stack sweet potato cubes and top with shredded chicken. Add your poached egg on top of the chicken. On the other side of your bread, layer bacon pieces. Put your pieces together for the best sandwich you have ever eaten.


No, there are no green things on this sandwich. I thought about it, and decided against it. You can do whatever makes your heart happy.

So go on, make your heart happy.

Friday Favorites #8

T.G.I. FREAKING F., y'all.

Thank goodness for weekends. We've moved into a (temporary) new home for the next year, and while we still have boxes that need to be unpacked and things that we need to find homes for, I'm feeling more settled than last week. Much more settled.

The husband has a "settling in" routine that I've learned not to mess with. He knows where all of the garage and electronics boxes are, and his first task is to organize the shelving in the garage and set up the entertainment system. That's what makes it feel like home to him.

Me? I need my shoes out of boxes/bags/suitcases and into their proper shelves. I need a place to put my jewelry. And I need candles.

Tortoise Fascination

The gorgeous bracelets are from Baublebar and Baublebar x Anthropologie, and you should get them on your wrists ASAP. I mean, how gorgeous is the solid tortoiseshell cuff going to look next to this bracelet and a Michael Kors watch?

I've been experiencing a year-long fascination with tortoiseshell accessories, starting with a linked tortoiseshell necklace from a friend's boutique & trunk show. It's no longer available on their website, but I did find a cheap copycat option for you to steal, at Claire's of all places!

My jaw dropped when I saw the price on this baby. $3.59. Not joking.

My favorite candles are by Voluspa, and I've just acquired a new obsession - the Moso Bamboo. Even better, it comes in this gorgeous jar, which looks gorgeous on a nightstand.

The sunglasses are my go-to favorites from Super, a daily necessity considering I've been riding with the top down and the wind in my hair all week long.

Pop It Real Good

I used to have a real thing for popcorn. Once upon a time, I could go through a whole buttery feast all by myself, licking the salty sludge from my fingertips as they plucked the last barely-popped kernel from the bag. That was back in the days of barrel-shaped juice boxes and Lunchables. These things were not organic. Not available at Whole Foods, or your health Mecca of choice.

What can I say? It was the 90s.

When I read Joy the Baker's post on Refinery 29, I thought, "Hey, I could do that." I've never made popcorn on the stovetop before (although I have made kettle corn in a giant vat with the burns to prove it), and after moving last week, I really don't have the energy for a full-on dinner.

I truly don't even know where most of my cooking stuff is.

Miraculously, I had the ingredients for this popcorn. They were practically staring me in the face.


Cinnamon Kettle Corn via Joy the Baker & Refinery29

- 3 TBS coconut oil
- 1/3 cup corn kernels (I looked at these spread across the bottom of the pan, thought it looked like a pitiful amount and added another half a cup which made a lot of popcorn. Hey, live & learn.)
- 2 TBS granulated sugar (more if you decided to take the excessive route I live on)
- 1/4 tsp ground cinnamon
- sea salt to taste

Put the coconut oil in your skillet/saucepan (I used cast iron), making sure you're using cookware with a corresponding lid. Melt the oil on medium heat. Add corn kernels and sugar. Place lid over pan, keeping it slightly open for steam to escape. Allow popcorn to start popping.  Once or twice (I did twice), close the lid all the way, pick up the covered pan with potholders and give it a little shake.

When the popping slows down, remove from heat and sprinkle with cinnamon & sea salt. Serve in a bowl or eat it straight from the pan with eager hands. You will be eager. You will love this stuff. You will eat it all.

Come to find out, Murphy's a pretty big fan of popcorn. When the little kernels started popping out of the pan (because I used too many), she had the best night ever. She chased every stray popped popcorn piece and wolfed it down.

So You're Running Late...

... like every morning.

I can't be the only person who doesn't bound out of bed with the strength of Samson, excitedly heralding the incoming e-mails and stress of yet another workday. Some mornings, yes, but those are rare. Most mornings, I hit the snooze button for about 30 minutes and find myself rushing out the door, promising that I'll never, ever do this again if I can just get to work on time and in one piece.

Which is always a lie.

So sometimes I need steps that can be taken care of while I'm at the various red lights on my way to work. I don't have time to dig through a massive bag filled with blue eyeliner and shimmery shadows when I'm in a rush - I need products that work fast.


Last-Minute Beauty


First things first. TOUCH UP greasy roots with a dry shampoo. While I like powders like Bumble & Bumble's Prêt-à-Powder for sprinkling in my hair and leaving it in overnight for fresh hair in the morning sometimes only an aerosol spray like Drybar's Detox gives me the immediacy I need at 9 a.m. To use: section hair and spray into roots. Let sit while you brush your teeth, brew coffee, etc. Rub into scalp, taking care to disperse any white residue. Blast with cool air from hair dryer to finish.

Next up, CONCEAL dark circles, blemishes and redness with this heavenly concealer from NARS. I haven't met a better do-it-all, stay-all-day formula, and I've tried a lot of concealers. This in Vanilla is a staple in my makeup bag. Dot onto blemishes and blend with brush or fingertips, pat into under-eye circles and in any area where you're concerned about discoloration or blemishes.

Then, PERFECT your complexion with a BB creme like Diorskin Nude. I've used and loved the Dr. Jart products for over a year, but this Diorskin Nude BB Creme may have made me a convert. I feel like I've got the glowy perfection of foundation, without the weight. Applied with a buffing brush, I can get full coverage out of this without trying too hard.

Once you've got the perfect canvas, you need to add a GLOW with dewy color to your cheeks so you don't look like a zombie. These Stila Convertible Color products are amazing - I keep one in my purse at all times. Just apply with your fingers to the apples of your cheeks and blend up and out toward the temples. Be sure to pick a shade that gives you a good flush - nothing too statement-looking for daytime.

When you're in a rush, the last thing you might be thinking about are your brows, but taking a minute to DEFINE your brows goes a long way. Benefit's Gimme Brow tool helps me apply color to my thin, nonexistent eyebrows while also whisking down the wonky strands that were smushed against my pillow. The mini brush delivers a fiber/gel formula that helps me create brows where there were none.

The final step? WAKE UP your lashes with a mascara that doesn't give you the spider-lash effect. I'm a mascara junkie and have tired just about every formula on the market, but this impulse purchase of Maybelline Full & Soft, Thick & Healthy mascara has changed my life. No more clumped lashes or spidered-out fringe. This mascara contains Vitamin E for soft, plump lashes, and the best part is that it washes off easily. Swipe horizontally to the right and left, then finish with a standard sweep up the lash, wiggling a little at the base of your upper lashline for more volume.
